1 teaspoon salt
¼ teaspoon chilli (optional)
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 cup water
3 ½ flat iron steak or top round steak or chicken breast.
1 cup fennel or celery sliced thinly
1 medium onion, thinly sliced
fresh lime juice.

In a plastic bag, combine the chilli powder with the salt, cumin, onion powder, garlic powder, water. Add the steak, seal bag and knead gently to coat. Refrigerate for 15 minutes.

Heat a large non-stick frying pan. Empty the contents of the bag into
the skillet and cook over medium heat, stirring occasionally, add vegies and cook until the vegetables are crisp-tender and the steak/chicken is cooked through, about 6
minutes. Remove from the heat. Serve immediately.

Grilled Marinated Prawns

1/4 cup chopped fresh parsley or coriander (optional)
1 lemon, juiced
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper or cumin
100g large medium cooked prawn meat

Combine all ingredients and marinate for 15 minutes

Preheat grill or BBQ for medium-low heat. Cook shrimp for 3-4 minutes per side,
or until opaque.

Serve with spinach or lettuce salad.

Chicken or Beef Burger

100g lean beef or chicken mince
All purpose seasoning (or Curry powder)

Mix seasoning and mince and form into burgers. Grill or BBQ.
Serve with Tomato salad or wrap burger in large lettuce leaves instead of bread.

Tomato Salad (serves 2)

4 medium size tomatoes
All purpose seasoning
Lemon juice
¼ red onion sliced
Coriander (optional)
Chilli powder (optional)

Mix all ingredients together and serve with grilled, poached or BBQ lean meat

San Choy Bow

100g Lean chicken mince
¼ diced red onion
All purpose seasoning
Large lettuce leaves

Cook mince and onion in non-stick pan until browned, add seasoning.
Spoon mince into lettuce leaves at the table and eat immediately.

Poached Chicken / Chicken Noodle Soup

2 Chicken fillets, whole, trimmed of fat
2-3 cups water
1 teaspoon Massel chicken stock powder
All purpose seasoning
Chilli (optional)

Put all ingredients into saucepan, bring to boil then turn heat down and simmer for
10-15minutes depending on size of chicken fillet.

Chicken can be eaten hot with grilled tomato.
It can be cooled and eaten with salad
Soup. Chop chicken and add back to cooking liquid to make soup. Add slim noodles, sliced celery, fennel or coriander as desired.

NB. Watch the scales, some people find the extra salt from the chicken stock can cause fluid retention.
